Mar Hor or 'Galloping Horses' is an emblematic Thai dish that features a spiced, caramelised mince, served on slices of fruit, meant to be eaten in one bite. This version was born out of curiosity: researching spices led us to Khao Kua, a (ground toasted rice) and reading about umami led us to shiitake rehydrated in miso, as a vegan answer to the dried shrimp in the original.
